
How to Make Cardamom Plum Sorbet
I recently purchased some fresh plums that looked too delicious to pass up. I enjoyed several with lunch throughout my work week but I still had a dozen left to use so I thought I’d make up a recipe – say hello to cardamom plum sorbet! In the summer I make a lovely cardamom rum plum jam and used that as my inspiration for this sorbet. Makes ~ 3 cups (1.5 pints).
Ingredients:
- 12 fresh plums, pitted and cut into 8 sections per plum
- 1 1/2 cups water
- 1 1/2 cups sugar (feel free to reduce the sugar if you prefer it tart, just be sure to reduce the water to the same amount)
- 1 1/2 teaspoons cardamom
- 1 1/2 tablespoons lemon juice
- Pinch of salt
Step One: In a 5 quart stock pot or large saucepan add the water and sugar, then the plums. Bring to a boil and then simmer for 10 minutes.
Step Two: Add the pinch of salt and the cardamom, stir into the plum mixture. Take the mixture off the heat and let cool.
Step Three: Add the lemon juice to the mixture and blend well using an immersion blender.
Step Four: Pour the cardamom plum liquid into a large 4 cup measuring cup or into a large pitcher – if you are using glass make sure the liquid is completely cooled down so the glass does not crack. Put it in the fridge for at least 2 hours.
Step Five: Add the cooled cardamom plum liquid into your ice cream/sorbet maker, I like to use this one from Cuisinart. The sorbet will take ~ 20 minutes to solidify.
Step Six: Once the sorbet is ready put it into a large container that can be put into the freezer. Let freeze for an additional 4 hours.
