Kelly’s Custard
This is my Mom’s recipe and it is one of my Dad’s favorite desserts – she has been making this for my Dad for as long as I can remember. It’s a very simple dish and can pass as flan if you are looking for a Mexican themed dessert. Serves 4.
Ingredients:
- 3 eggs
- 1/4 cup of sugar & 1/3 cup of sugar
- 1 1/2 cup of milk
- 1 teaspoon of vanilla
Step #1: Preheat your oven to 350 degrees.
Step #2: Caramelize 1/3 cup sugar in a small sauce pan on medium heat. Pour the melted sugar into the bottom of a glass pie pan immediately as the sugar will harden as it cools.
Step #3: Put the 3 eggs, 1/4 cup of sugar, 1 1/2 cups of milk and 1 teaspoon of vanilla in a small blender. Blend together.
Step #4: Pour the egg mixture into the pie pan on top of the melted sugar.
Step #5: In a large rimmed cookie sheet or base of a broil pan make a water bath (fill with ~1/2″ of water) and put the pie pan in the middle.
Step #6: Bake at 350 degrees for 50 minutes. Let cool and then pop it in the fridge if you plan to serve it later. Enjoy!
Note: Be very careful when you take this out of the oven – the water will be hot and you do not want to spill it on yourself as you take it out.
