Classic Lemon Loaf with Sweet Lemony Zest Glaze

Every time my Mom and I went to Starbucks together we would split a slice of lemon loaf as we enjoyed our coffee (or in my Mom’s case, a hot Chai latte). Any time I have a slice of lemon loaf it brings me back to those special coffee dates and I wanted to recreate that with my own homemade version. I hope you enjoy it as much as I do!

This recipe makes one large loaf (typically 8.5″ x 4.5″) and two mini loaves (these are normally 5″ x 3″ and are great to give as gifts). Make a 1/2 batch if you just want one large loaf. Enjoy!

Ingredients:

  • 1 cup butter, softened
  • 1 cup of sugar
  • 4 eggs
  • Zest from two large lemons (the more the better!)
  • 1/4 cup lemon juice
  • 3 cups of all-purpose flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup of milk
  • 1 cup of powdered sugar
  • 2 tablespoons of lemon juice
  • 1 tablespoon of lemon zest (optional)

Step One: Preheat your oven to 350 degrees. Spray your bread pans with non-stick cooking spray.

Step Two: In a large bowl or KitchenAid mixer, add the softened butter and sugar and mix well.

Step Three: Add the eggs, lemon zest and lemon juice and mix well.

Step Four: Add in the flour, salt, and baking powder along with the milk, mix well to fully combine all of the ingredients into the batter.

Step Five: Pour the batter into one large bread pan and the two smaller bread pans.

Step Six: Bake the mini loaves for 30 minutes and the large loaf for 50 minutes.

Step Seven: While the loaves are baking add the powdered sugar and lemon juice (and zest if you choose to use it) into a small bowl and mix well to make the glaze.

Step Eight: When the loaves are done baking and have cooled, drizzle the glaze over the top.

Step Nine: Enjoy!
