The Best Oatmeal Chocolate Chip & Sea Salt Cookies

In our family these are known as Four In One cookies and this is my Grammie Ellen’s recipe. I’ve been enjoying these cookies for as long as I can remember and they are my Papa John’s absolute favorite! I’ve made a few slight tweaks to the original recipe and I think these will soon become a staple in your household too! If I am making this for my family (there are only 3 of us) I make a half batch. Full batch: 24 cookies, Half batch: 12 cookies. Enjoy!

Ingredients:

  • 1 cup of butter, melted
  • 1 cup of brown sugar
  • 1 cup of white sugar
  • 2 eggs
  • 2 teaspoons of vanilla
  • 1 1/4 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 3 cups of oatmeal
  • 1 package of chocolate chips
  • Flaked sea salt, such as Maldon (optional but highly recommended)

Step One: Preheat your oven to 350 degrees.

Step Two: Add the butter, brown sugar, and white sugar together in a stand mixer and mix well.

Step Three: Add in the eggs and vanilla, mix well.

Step Four: Add the flour, salt, and baking soda, mix well.

Step Five: Add the oatmeal and chocolate chips, mix well.

Step Six: On a baking sheet or pizza pan (with holes on the bottom) line with parchment paper (this is key!). Then take a large scoop of the cookie batter and place on the parchment, each pan will accommodate 6 cookies. Add a pinch of sea salt onto the top of each cookie.

Step Seven: Cook for 12 minutes (they may appear to be undercooked), then let cool on the pan for 5 minutes (this is very important if you want them nice and crisp)!

Step Eight: Enjoy with a cold glass of milk!
