Quick & Easy Ooey Gooey Molten Lava Cakes

This is a “fancy” dessert you can make with just a few minutes of prep time. I serve this regularly when we have friends over for dinner. This recipe has just 5 ingredients and is sure to impress your guests. Serves 4.

Ingredients:

  • 1/2 cup butter
  • 2 tablespoons flour
  • 2/3 cup bittersweet chocolate chips
  • 2 large eggs + 2 large egg yolks
  • 1/4 cup of sugar
  • Serve with a scoop of ice cream (optional)

Step One: Preheat your oven to 450 degrees.

Step Two: Spray four 6 oz. ramekins or glass bowls. I find that using Baker’s Joy or a cooking spray that has flour works best – this will ensure your lava cakes will slide right out of the bowl after they are done baking.

Step Three: Put the butter and the chocolate chips in a glass bowl and microwave on high for 30 seconds, stir, and then microwave for another 30 seconds until completely melted and smooth.

Step Four: Add the eggs, egg yolks, and sugar into the glass bowl with the melted butter and chocolate. Using a whisk or electric mixer mix until fully combined, add the 2 tablespoons of flour and mix until fully incorporated.

Step Five: Divide the batter between the four ramekins/glass bowls and bake for 8-10 minutes until the edges are fully set and the center still jiggles. Note: I like mine extra gooey so I take it out at 8 minutes but my husband likes his well done so his stays in for 10 minutes.

Step Six: Run a knife around the edge of each molten lava cake. Carefully pick up the lava cake with an oven mitt and turn the ramekin/bowl upside down so it slides into the bowl it will be served in. Your molten lava cake should have a liquid center while the outside will be solid.

Step Seven: Add a scoop of ice cream to the bowl – this is optional but I would highly recommend it. I like to serve it with vanilla ice cream, fresh raspberries & mint – or with mint chocolate chip ice cream. Get creative here and have fun trying different ice cream flavors with the molten lava cake.
