Cherry Balsamic Salad Dressing & Tricolore Pizza

This is my favorite salad dressing and I make it all the time. It’s fast, fresh, and simple. I also use this dressing for a Tricolore salad pizza (how to make the pizza crust is below). I use mixed greens, a diced Roma tomato, and shaved parmesan for the base of my salad and then I add the dressing.

Ingredients:

  • 1/3 cup of extra virgin olive oil
  • 3 tablespoons cherry balsamic
  • 2 teaspoons of dijon mustard
  • 1 large garlic clove minced
  • 1 teaspoon lemon juice
  • Fresh ground pepper and dash of salt
  • Hint: Double this recipe if you are serving a large salad for 4+ people.

Step #1: Mix all of the above ingredients in a mason jar, shake, and add to your salad.

Tricolore salad pizza crust (it’s worth all the steps!)

Step #1: Preheat the oven to 400 degrees.

Step #2: Take a 16 oz. prepared plain pizza dough (my go to for this is Trader Joe’s) and split it in half.

Step #3: Sprinkle some flour on your work surface and roll out the pizza dough to your desired size. I like it really thin so it’s extra crunchy.

Step #4: Put the rolled out dough on a pizza pan and prick it with a fork then place it in the oven for 6 minutes.

Step #5: Take the crust out of the oven and drizzle honey and agave syrup over the crust, use a basting brush to spread it evenly and place it back in the oven for 6 more minutes.

Step #7: Take the crust out of the oven and sprinkle grated parmesan cheese over the honey/agave and put it in the oven for a final 6 minutes.

Step #8: Let cool and serve with the cherry balsamic salad (listed above) on top of the crust. Add additional parmesan cheese if you would like.
