Kelly’s Banana Bread

There is something comforting about a loaf of homemade bread and this banana bread recipe is something special! This is my Mom’s recipe and there is a different ingredient you’ll notice, sour cream. It’s a small quantity but it makes a big difference. This recipe makes one large loaf and two mini loaves (a mini loaf is pictured here) and I love to make these as gifts for friends or neighbors.

Ingredients:

  • 2 cups of flour
  • 1/2 cup of sugar
  • 1/4 cup of brown sugar
  • 1 teaspoon baking soda
  • 3 ripe bananas
  • 1/4 cup of sour cream
  • 1/4 cup of vegetable oil
  • 2 eggs
  • Optional: Top with walnuts and/or chocolate chips.

Step 1: Preheat your oven to 350 degrees.

Step Two: Put the bananas into your kitchen aid or large bowl and stir until the bananas are creamed together.

Step Three: Add the sugar and brown sugar and mix – then add your sour cream, eggs and oil, mix.

Step Four: Add the baking soda and flour and mix well until fully combined.

Step Five: Spray your bread loaf pan and pour the batter into the pan (or pans if you are making mini loaves). Top with walnuts and/or chocolate chips if you would like.

Step Six: Place in the oven for ~50 minutes for a large loaf or ~40 minutes for the mini loaves. Note: oven temperatures can vary, I like to check on the bread at the 30 minute mark and adjust the time as needed.

Enjoy with a nice hot cup of tea or coffee!

    Sounds delish. I make it with chocolate chips ( always Lauren’s favorite) but never thought of sour cream. Her legacy is taking on new life. Thanks for sharing Kristin. I’ll try that some time.

      Kathy – Yes! I love to add chocolate chips and walnuts. I just made banana bread yesterday and added a new photo and modified the recipe to include optional toppings. Thanks for the reminder! – Kristin
