Disclaimer: This is a recipe by Magnolia Journal which I have modified and tweaked to perfection. This is a great fall snack on it’s own or to use as a salad topping. Makes 1 1/2 cups. Chicken pot pie is quite simply one of my favorite comfort food meals and was something I enjoyed as a child when my Mom made it. This is a great recipe for a weeknight – super quick and simple. Amazingly Simple Apple Butter
My husband absolutely loves apple butter so for the past two years I have been perfecting this recipe. This year I made my apple butter in a crockpot which made this process so much easier – no more simmering on the stove for 6+ hours! This recipe yields ~4 cups of apple butter and can be canned and put in the fridge for ~1 month. Delicious Cherry & Date Chocolate Chip Homemade Granola Bars
If you are looking for a clean and healthy snack this recipe will quickly become a go to for you! This can easily be modified to be gluten free – just use gluten free oats or if you’d like it to be vegan eliminate the honey and use maple syrup instead. These bars can also be dairy free if you use dairy free chocolate chips which can be found at Trader Joe’s and many grocery stores. Super Simple Chicken Enchiladas Verde
Mexican food is our absolute favorite and I like to have recipes for the weekend that feel like fun easy dishes. It curbs the temptation to go out to eat and I like to make this when we have friends over. I can do all the prep before they arrive and just pull it out of the oven when we are ready to sit down at the table. Serves 8. This recipe is one of my absolute favorite summer meals – it is light, fresh, and super easy to make. Many of our friends have eating restrictions (no dairy, no eggs, gluten free, etc.) so I like to try new recipes that they can enjoy when they visit our home. Serves 6. This recipe is so delicious and we make it often – it’s a nice one dish meal and great for serving a big group. It’s also a great way to use up sugar snap peas and green onions from the garden. My Mom and her college roommate at Iowa State University would make these cinnamon rolls in their dorm room. She made these cinnamon rolls on Saturday or Sunday morning when I was a child and now we do the same in our home.
