Overnight Oats with Berries & Cream
In my new grab and go morning schedule this recipe has also become a staple. I make 4 8 oz. servings with the below ingredients and pop them in the refrigerator on Sunday night so they are ready for the work week. I make them as individual servings in low 14 oz. glass bowls from IKEA so I can add a lot of fresh fruit on top and still put the lid on. Ingredients: Step One: In a low glass bowl add 1/2 cup of oatmeal and 1/2 cup of milk. Do this for all 4 servings. Step Two: In a medium bowl add the vanilla yogurt and Greek yogurt, vanilla,…

How to Make Overnight Oats: Coconut Blueberry & Mocha
Overnight oats are such an easy and nutritious way to start your day. When I was caring for my Mom before she passed away I made overnight oats for her every evening, the coconut blueberry recipe I share here was her absolute favorite. I also love to make these when we are out sailing and spending the night on the water – perfect for camping/road trips too! The recipes here make 1 serving each but I also multiply this recipe by 4 when I am making a larger batch for my family for the week. Coconut Blueberry Step One: In a small breakfast bowl or glass jar add the oats,…

Peach Pie Smoothie*
This is a special recipe in our house and it’s super simple to make. In our house, this will always be known as Grammie Kelly’s peach pie smoothie and it was the last meal I made for my Mom before she passed. It tastes like summer in a glass and is creamy, smooth, and delicious! Taking a sip transports me back in time where I am sitting by her side reading, talking, praying, reminiscing, and giving gratitude for a full life of love and kindness she blessed her family with. We hope you enjoy this smoothie as much as we do! Serves 2. *The credit for this recipe goes to…

How to Make a Dutch Baby Pancake
This is a simple and delicious recipe that is a Saturday morning staple in our house. A Dutch Baby is also known as a German pancake and is also very similar to a David Eyre pancake and can be served in a variety of ways. Serves 4. Ingredients: Step #1: Preheat the oven to 425 degrees. Step #2: Place 2 tablespoons of butter in a heavy oven proof skillet – I use a 10″ cast iron pan and then place it in the oven so the butter melts. I like to use this Lodge Cast Iron pan – I also use this for my sourdough recipe which can be found…
